Visited Supply and Demand yesterday for dinner and was quite surprised to see such a wonderful dine-in located in esplanade...
Modern Italian Peruvian Bistro & Rooftop Bar
(Located next to Makasutra)
A vintage studio setup was what greeted us at their front door. When we entered the Bistro Bar, the light settings were a little dim but lively. To maximize the little bistro, the tables were set closely together. The choice of music were great, acoustic genre was chosen and it wasn't played too loudly. Which build up on the snugly warm and comfortable ambience.
With their best effort, Supply & Demand caters to the different groups of diners, as you may find various setups like;
Rooftop seating, where a great view of the surroundings can be observed. If you have a minimum of 8 pax do give them a ring to book the Gazebo tent located at the corner of the rooftop. They have the air-conditioned area and the outdoors seating too!
Their Appetizers are served in mess tin! It just bring back the good old days of camping.

When my order came, "Fish of the Day" I was quite surprise that they used the method: al cartoccio* for preparing the fish.
Opening up the parchment bag, the savory aroma just fills the air. The fish was done just right!
On top of choosing the mains, to solve some of our problems of making choices, Supply & Demand offers to aid in selecting the sides for you. How do you go about ordering, you just need to pick your meat staples and the sides (which consists of a salad and a starch based item) will be chosen by the Chef.
If you can't finish the usual portion, you may opt for the choice "Tasting" (which is half of the normal portion; according to the server, it is about half a palm size) "Full" consists of the normal portion size.
For the set I ordered, it cost me S$23. With the mouthwatering and tenderness of the fish (By the way, I am very particular about fish) I feel it worth the price.
- I dislike my fish to be overdone, having the fishy smell is a 'BIG NO-NO', the sweetness of the fish must be tasted even though it's marinated with other spices. -

As the Menu it ranges from about S$10 to S$40, it is great for group nights-out too.
There weren't any problem with getting the attention of the servers at all. They are all dressed up pretty neatly. Like always, we aren't a group of quick decision makers, with the patience of the servers and recommending us the best deal of the day. We wouldn't mind visiting Supply & Demand once more.
* al cartoccio in Italian, is a method of cooking in which the food is put into a folded pouch or parcel and then baked.
